Cortese vines grow on the hills of the town of Gavi . The vines are located at an altitude of 250-300 meters on predominantly marl -sandy soils : strong marl formations alternating with sandstone ( the color of these soils varies from light to light brown ) . After a short cold maceration on the skins followed by fermentation in stainless steel tanks, the wine matures with a brief refining on the lees and partial aging in small barrels . Finally , we do a simple distillation in a bottle . This wine reveals notes of honeysuckle , grapefruit , peach , apricot , almonds , green apple and rocky scents . The palate is fresh and mineral, characterized by a beautiful balance.
