Description of Winery Cave des Amandiers

Domaine Cave des Amandiers is located in Valais, a Swiss wine region known for its unique climate and fertile soils that favor the cultivation of indigenous grape varieties. This estate is famous for its innovative and sustainable approach to viticulture, producing wines that fully express the identity and complexity of their local terroir.

Description of Cuvée Fendant

Cuvée Fendant from Cave des Amandiers is a white wine made from the Chasselas grape variety, typical of Switzerland. This wine embodies the pure expression of the Valais terroir, offering remarkable freshness and crystalline minerality. Meticulous winemaking techniques, including temperature-controlled fermentation, help preserve the natural aromas and vibrant acidity of the grape variety.

Aromas of the Cuvée

Fendant is characterized by delicate aromas of white flowers, green apple and mineral touches reminiscent of the rocky terroir of Valais. Subtle notes of citrus and flint complete this olfactory profile, making the wine both complex and approachable.

Characteristics of the Cuvée

  • Grape variety: Chasselas
  • Profile: On the palate, the wine offers a beautiful roundness, balanced by a refreshing acidity which prolongs the tasting. The texture is elegant and the lingering finish highlights the mineral and fruity nuances.
  • Aging Potential: Although this Fendant is often appreciated in its youth for its freshness, it also has aging potential which allows the aromas to develop and enrich with time.

Pairings with this Cuvée

This Fendant is excellent with light dishes such as seafood, lake fish or mild cheeses. Its fresh and invigorating character also makes it an excellent aperitif.

Where are we traveling?

Valais

The Valais wine region, in the heart of the Swiss Alps, is one of the most important in the country, with more than 5,000 hectares of vines. Its history dates back to Roman times and has been enriched over the centuries by monks and local winegrowers. The terraced vineyards, held up by dry-stone walls, bear witness to a heroic form of viticulture that respects the terroir. Valais enjoys a dry, very sunny continental climate, ideal for ripening grapes. Wide differences between day and night temperatures enhance the aromatic expression and freshness of the wines. The varied soils allow many indigenous grape varieties to be grown, such as Cornalin and Petite Arvine. Balancing tradition and innovation, the winegrowers of Valais carry on an authentic craft. The Valais vineyards thus offer rich, characterful wines deeply rooted in their terroir.

Switzerland

product descriptions logo

Switzerland, a country known for its majestic mountains and shimmering lakes, also has a rich and diverse wine heritage. Although less famous than its French or Italian neighbors, Swiss viticulture enjoys an excellent reputation thanks to the exceptional quality of its wines. Swiss vineyards extend primarily into the regions of Vaud, Valais, Geneva, Neuchâtel, and Ticino, each offering unique climatic conditions and soils that lend themselves to growing distinct varieties of grapes. Valais is Switzerland's largest wine region, famous for its aromatic white wines such as Fendant, made from Chasselas, and powerful reds like Cornalin and Humagne Rouge. The region's dry, sunny climate, combined with shale and granite soils, creates ideal conditions for these grape varieties. The Vaud region, particularly around Lake Geneva, is renowned for its elegant white wines, notably the Lavaux vintages, a UNESCO world heritage site. These terraced vineyards not only offer wines of great finesse but also spectacular views of the lake and surrounding mountains. Geneva, although smaller in terms of wine production, is dynamic and innovative, producing a variety of wines that range from classic Chasselas and Gamay to experiments with international grape varieties. Ticino, close to Italy, is dominated by Merlot, which is vinified there in both red and white varieties (white Merlot being vinified without contact with the skins of the grapes). The mild climate and clay-limestone soils give these wines remarkable structure and complexity. Neuchâtel excels in the production of white wines, notably with its Chasselas, but is also known for its Œil-de-Perdrix, a delicate and very popular rosé. Swiss wines, often produced in small batches but with great attention to detail, are mainly consumed locally or exported in small quantities, making them hidden treasures for wine connoisseurs and lovers around the world. Switzerland is a country where tradition and innovation meet in the vineyard, offering an authentic and high-quality wine experience.
