Zéro Cabernet Merlot 2023Chavin
The Chavin Zéro Cabernet Merlot cuvée is made by the house of Chavin, based in Béziers, in the Hérault, in the heart of the Languedoc. Sold under the name Vin de France désalcoolisé (dealcoholised), it draws on wines from the south of France, where the sunny, dry Mediterranean climate, cooled by sea breezes, favours healthy, aromatic grapes. This dealcoholised red blends Cabernet Sauvignon and Merlot, two Bordeaux grape varieties very well suited to the southern sun, chosen for their freshness and aromatic intensity.
The Cabernet Sauvignon and Merlot are vinified as a red, so as to extract colour, fruit and structure. The wine is then dealcoholised by vacuum evaporation, without pasteurisation, at a temperature not exceeding 35 °C. This gentle process preserves the wine's sensory characteristics and gives a fresh drink, with no sediment and a remarkably stable colour. No flavourings are added: the aromatic profile comes solely from the grapes and the winemaking.
This wine reveals notes of blackcurrant, strawberry, blackberry, black cherry, black pepper, vanilla, liquorice and violet. The red colour with purple glints heralds an intense, complex nose, shared between fresh fruit and sweet spices. The palate is crunchy and balanced, with a supple texture, and ends on a fruity, slightly spicy finish.
