Chardonnay 2021

Yarra Yering Chardonnay comes from the Yarra Valley, northeast of Melbourne in Victoria, a pioneering region of cool-climate Australian viticulture. The vines are situated on well-drained slopes with soils composed primarily of volcanic clay and gravelly alluvium, providing an ideal environment for the slow ripening of the white grapes. The tempering influence of the ocean and cool nights preserve the natural acidity, while the careful exposure of the plots allows for a balance of aromatic concentration and structure.

Fruit sourced from the Yarra Valley, hand-picked and chilled overnight. Whole bunch pressed to French oak barrels, 30% new, for fermentation. Indigenous yeast fermentation with a small portion undergoing malolactic fermentation to add complexity and texture. The wine is then matured on lees in barrel for 10 months with minimal stirring to preserve freshness and purity of fruit before bottling with minimal fining and filtration.

This wine reveals notes of white peach , lemon , and green apple , enhanced by floral touches of white blossom and a subtle mineral dimension. Elegant woody nuances of vanilla and toasted hazelnut integrate delicately, adding complexity without overpowering the fruit. The palate has a chalky texture, supported by a lively and precise acidity, with a full yet taut mid-palate, and a long, mouthwatering, and slightly saline finish that begs for another glass.
