The M3 Chardonnay cuvée comes from the renowned Adelaide Hills vineyard in Australia, renowned for its ideal climatic conditions and varied soils. Located at an altitude of approximately 400 meters, this region benefits from cool nights that allow for a slow and balanced ripening of the grapes. The well-drained slopes and varied exposures allow for the cultivation of highly expressive Chardonnays, revealing the unique terroir of the Adelaide Hills. This results in wines of remarkable finesse, where the quality of the grapes is highlighted.

To craft this prestigious cuvée, Shaw & Smith adopts a traditional winemaking method. The grapes are carefully hand-harvested to ensure optimal selection at ripening. Once in the cellar, fermentation takes place in oak barrels, promoting the integration of complex aromas while preserving the purity of the fruit. The wine is then aged on lees for approximately nine months, a practice that enriches the texture and depth of the Chardonnay. This meticulous process results in an elegant and balanced wine, faithful to the estate's hallmarks.

This wine reveals notes of William pear , of chamomile , of lemon, citrus peel, toasted hazelnut , flint and gunflint . On the palate, the sensation is both round and vibrant, offering a beautiful balance between texture and acidity .
