Based in Australia, the Idee Fixe estate crafts its Premier Brut Blanc de Blancs from vines located in the cool Margaret River region of Western Australia. Benefiting from the oceanic influence of the Indian Ocean, the vineyard enjoys refreshing sea breezes and well-drained soils, a blend of sand, clay, and limestone outcrops. This temperate climate allows for a slow ripening of the grapes, preserving their natural acidity and aromatic purity—ideal conditions for producing precise and elegant sparkling wines.

The Chardonnay grapes are hand-harvested and then gently pressed as whole bunches before cold settling. The juice is then fermented in temperature-controlled stainless steel tanks and oak barrels, with partial malolactic fermentation to preserve freshness. After secondary fermentation in the bottle, the wine is aged for an extended period on its fine lees to develop complexity and texture, before disgorgement and a moderate dosage to maintain the lively and precise style of the Premier Brut Blanc de Blancs.

This wine reveals notes of fresh citrus , green apple , and white peach , complemented by delicate floral touches and a subtle brioche nuance from aging on the lees. Mineral accents add tension and highlight the precision of the aromatic profile. On the palate, the texture is creamy , carried by vibrant acidity and fine bubbles that extend into a persistent, fresh, and perfectly balanced finish .

It is located a three-hour drive south of Perth in Western Australia. The vineyards are concentrated in the immediate vicinity of the small, very touristy town of Margaret River, the region's namesake and capital. Margaret River is the most recently discovered major wine region in Australia. It all began in 1965 when an agricultural engineer, John Gladstone, observed that certain soils were particularly well-suited to grape growing. The climate is Mediterranean with oceanic influences, and rainfall has decreased significantly in recent years due to drought. Margaret River has made a name for itself with its refined Cabernet Sauvignon, its elegant Shiraz, its citrusy Chardonnay, and its refreshing, herbaceous Sauvignon Blanc and Sémillon wines.
