Between hills, olive groves and forests, this landscape enjoys sunny days and cool nights that preserve the liveliness of the white grape varieties.\u003c\/p\u003e\u003cp\u003eThe Trebbiano Toscano and Chardonnay, harvested ripe, first undergo cold maceration on their skins, a step that extracts the grape's aroma precursors. The grapes are then pressed, and the must ferments at a controlled temperature of around 18 °C to preserve all the freshness of the fruit.
