The vines are not close to the river but on a plateau at the top of the slope, between 550-700m. Cold nighttime temperatures slow ripening and help maintain distinct acidity and freshness in all of its wines.\u003c\/em\u003e\u003c\/p\u003e\n\n \u003cp\u003e“ \u003cstrong\u003eUivo Curtido\u003c\/strong\u003e ” is made from 100% \u003cstrong\u003eMoscatel Galego\u003c\/strong\u003e from 35-year-old vines grown organically on \u003cstrong\u003eschist\u003c\/strong\u003e and \u003cstrong\u003egranite\u003c\/strong\u003e soils. The grapes are harvested by hand and undergo vigorous sorting in the vineyard. They are partially destemmed but not pressed, then left to macerate for 4 months. Fermentation takes place in cement vats with native yeasts. The wine will then be aged on fine lees for 6 months, then bottled without filtration. Contact with the skins gives texture and substance as well as a beautiful orange color.
