Planted on a 10 to 15% slope facing south-east, the vine takes root in shallow hard limestone, which gives the wine its tension. The vines, 30 years old on average, are farmed by Domaine Gaillard with mechanical weeding.\u003c\/p\u003e\u003cp\u003eThe harvest is done by hand. The grapes are gently pressed in a pneumatic press, then the juice is settled statically for 12 to 48 hours. Alcoholic fermentation, carried out at 18 °C with native yeasts, is followed by malolactic fermentation. Ageing takes place entirely in tank, to preserve the purity of the limestone terroir.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003epear\u003c\/strong\u003e, \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003egreen apple\u003c\/strong\u003e, \u003cstrong\u003eacacia honey\u003c\/strong\u003e, \u003cstrong\u003ewhite flowers\u003c\/strong\u003e, \u003cstrong\u003egingerbread\u003c\/strong\u003e, \u003cstrong\u003etoasted bread\u003c\/strong\u003e and \u003cstrong\u003eflint\u003c\/strong\u003e. The nose, fine and discreet, shows a light toasty character.
