The vineyards sit on slopes below this mountain and the vines are cooled by fresh winds (hot summers, wide temperature range). This 100% Pinot Noir cuvée comes from three sub-regions of \u003cstrong\u003eCentral Otago\u003c\/strong\u003e: Bendigo,  Pisa and Gibbston. The grapes are harvested by hand: 30% as whole bunches and the rest carefully destemmed. Fermentation takes place in open vats. The wine is then aged for \u003cstrong\u003e10 months in old French oak\u003c\/strong\u003e barrels. This superb Pinot Noir gives off aromas of \u003cstrong\u003echerry\u003c\/strong\u003e, \u003cstrong\u003ewild strawberries\u003c\/strong\u003e, fresh \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003eredcurrant\u003c\/strong\u003e, \u003cstrong\u003eleather\u003c\/strong\u003e, \u003cstrong\u003eforest\u003c\/strong\u003e and \u003cstrong\u003efloral notes\u003c\/strong\u003e, \u003cstrong\u003eclove\u003c\/strong\u003e, \u003cstrong\u003etobacco\u003c\/strong\u003e and \u003cstrong\u003espices\u003c\/strong\u003e. Planted in 1993 on a north-facing slope, between 282 and 300 metres above sea level, the plot catches the autumn sun but remains exposed to the wind. The dry, sunny semi-continental climate, with cool nights, preserves the acidity of the grapes.\u003c\/p\u003e\u003cp\u003eThe grapes, grown biodynamically, are picked by hand, then whole-bunch pressed. The juice settles overnight and flows by gravity into barrels. It ferments with its native yeasts in used French oak barrels, with no new oak, followed by a long malolactic fermentation.
