The grapes come from São Jorge, on the north coast, where the vines are trained on trellises or pergolas. The volcanic soils, made up of basalt, trachyte and tuff, and the temperate oceanic climate, whose temperature and humidity vary with altitude, preserve the acidity that allows these wines to span the decades.\u003c\/p\u003e\u003cp\u003eThe 1991 harvest was done by hand, with a quality selection in several passes according to the ripeness of the grapes. Fermentation was halted by fortification with grape spirit to retain the natural sweetness of the Malmsey. The wine then aged according to the traditional canteiro system, in 650-litre casks at ambient temperature, until the month it was bottled, in 2023, after more than thirty years of slow evolution in the house's lodges.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eburnt wood\u003c\/strong\u003e, \u003cstrong\u003edried fruit\u003c\/strong\u003e, \u003cstrong\u003eexotic spices\u003c\/strong\u003e, \u003cstrong\u003etoasted walnut\u003c\/strong\u003e, \u003cstrong\u003edried fig\u003c\/strong\u003e, \u003cstrong\u003edate\u003c\/strong\u003e, \u003cstrong\u003ecaramel\u003c\/strong\u003e and \u003cstrong\u003ecinnamon\u003c\/strong\u003e. The mahogany colour shows copper tints and golden glints.
