These natural conditions favour slow ripening of the grapes, ensuring freshness, aromatic intensity and finesse, characteristics that make Patagonia one of the most promising regions for Pinot Noir in Argentina.\u003c\/p\u003e\n\u003cp\u003eThe harvest is \u003cstrong\u003edone by hand\u003c\/strong\u003e, then some whole grapes are added to the fermentation to enhance aromatic complexity. \u003cstrong\u003eAlcoholic fermentation\u003c\/strong\u003e lasts around 15 days in stainless-steel tanks, with selected yeasts, including \u003cstrong\u003e50% whole bunches\u003c\/strong\u003e to intensify the fruity aromas. A few gentle pump-overs aerate the must and even out the fermentation.
