The grapes come from old Sangiovese vines planted in 1930, grown on their own roots in clay-loam soils. The vineyard is farmed agroecologically, with no herbicides or systemic products, in order to preserve the expression of these nearly century-old vines.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested and then vinified with around 25% whole bunches, the rest being destemmed. The fruit is moved by gravity into small concrete tanks, where fermentation takes place with native yeasts at between 24 and 26 °C. Very gentle cap management allows slow extraction, favouring fine tannins and vibrant fruit.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003emorello cherry\u003c\/strong\u003e, \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003ered plum\u003c\/strong\u003e, \u003cstrong\u003eviolet\u003c\/strong\u003e, \u003cstrong\u003eoregano\u003c\/strong\u003e, \u003cstrong\u003etea leaf\u003c\/strong\u003e, \u003cstrong\u003epepper\u003c\/strong\u003e and \u003cstrong\u003eleather\u003c\/strong\u003e. Tangy red fruit combines with the floral and herbal touches typical of the variety, extended by a spicy note.
