The juice is then fermented in open vats and aged 70% in stainless steel 30% in old French oak barrels.\u003c\/span\u003e \u003cspan data-mce-fragment=\"1\"\u003eNo additions are made to the wine other than sulphur before and after fermentation.\u003c\/span\u003e This wine based on freshness and lightness has a creamy texture, a vibrant character, with \u003cstrong\u003elayers of spices\u003c\/strong\u003e , \u003cstrong\u003epepper\u003c\/strong\u003e and delicious flavours of red fruits such as \u003cstrong\u003eredcurrant,\u003c\/strong\u003e \u003cstrong\u003eviolet\u003c\/strong\u003e and \u003cstrong\u003estrawberry\u003c\/strong\u003e . All the fruit is handled in whole bunches; no crushing or destemming takes place. There is no addition to the wine other than sulphur before and after fermentation.
