Here the estate works old field-blend vines, farmed organically on soils mixing limestone, clay and sand, at almost 900 metres. The extreme continental climate, with hot summers and very cool nights, encourages slow ripening and grapes that are both ripe and full of freshness.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand and vinified as whole bunches with native yeasts. Fermentation proceeds slowly in concrete tanks, with a maceration of 18 to 28 days, then malolactic fermentation takes place in barrels. Ageing lasts 12 to 15 months in French barriques, 15% of them new, before bottling without fining or filtration.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003ewild blackberry\u003c\/strong\u003e, \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003eblack cherry\u003c\/strong\u003e, \u003cstrong\u003emyrtle\u003c\/strong\u003e, \u003cstrong\u003emaquis\u003c\/strong\u003e, \u003cstrong\u003epepper\u003c\/strong\u003e, \u003cstrong\u003eliquorice\u003c\/strong\u003e and \u003cstrong\u003egraphite\u003c\/strong\u003e. The juicy, slightly sanguine black fruit comes with spicy, wild nuances.
