The ungrafted (pre-phylloxera) and low-yielding vines were planted in the late 1960s and are naturally cultivated according to organic farming principles, resulting in wines that express the terroir and its varietal characteristics. All grapes are hand-harvested once they have reached optimum ripeness and then carefully selected before vinification. The grapes are gently pressed and fermentation takes place in contact with the skins, resulting in a complex development of flavors. Fermentation takes place with indigenous yeasts in clay amphorae and will age for 8 months, before being bottled without fining or filtration.
