Their philosophy is based on a most\u003cspan data-mce-fragment=\"1\"\u003e \u003c\/span\u003e\u003cstrong data-mce-fragment=\"1\"\u003enatural\u003c\/strong\u003e\u003cspan data-mce-fragment=\"1\"\u003e \u003c\/span\u003epossible of wine and viticulture, focused mainly on knowledge and respect for grape varieties, the soil, nature and its rhythms.\u003c\/em\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr\u003e \u003cbr\u003eThis wine is made from \u003cstrong\u003eCinsault\u003c\/strong\u003e and \u003cstrong\u003eGrenache\u003c\/strong\u003e , both grown in the famous \u003cstrong\u003eSwartland\u003c\/strong\u003e region. The harvest is done by hand. Fermentation takes place partly with whole clusters, thanks to the action of native yeasts. The long but delicate extraction of Cinsault tannins and Grenache fruit gives an elegant and concentrated character to this Swartland blend. Then the wine is stored for \u003cstrong\u003e12 months\u003c\/strong\u003e in \u003cstrong\u003eold French barrels\u003c\/strong\u003e and \u003cstrong\u003elarge tuns\u003c\/strong\u003e .
