The Masseria Surani estate farms eighty hectares of vines organically here, trained in close-planted Guyot. The fertile, permeable limestone soils take on a red-ochre hue due to their high iron content. The hot, dry Mediterranean climate is refreshed by sea breezes coming from the Ionian Sea.

The Primitivo and Cabernet Sauvignon are harvested when ripe then ferment for twelve to fifteen days in stainless-steel tanks, at a controlled temperature, with repeated pumping over to extract colour, fruit and structure. The wine is then aged for six months in oak barrels, a short ageing that rounds out the tannins and adds a light spicy touch without masking the fruity expression of the two grape varieties.

This wine reveals notes of cherry, blackberry, plum, blackcurrant, fig, black pepper, clove and liquorice.
