North-facing at 520 metres, it is among the highest vineyards in the Barolo appellation and is surrounded by an almost three-hundred-year-old wood of oaks and hazel trees, the habitat of the white truffle. The Messinian clay-limestone soils and the coolness of the site give the Burgundian grape a slow, steady ripening.\u003c\/p\u003e\u003cp\u003eFermentation is spontaneous, with native yeasts, in wooden truncated-cone vats, with a maceration of around twenty-five days that delicately extracts colour and tannins. The wine is then aged for some twenty months in 228- and 350-litre French oak barriques and casks, then bottled unfiltered. This patient work preserves the transparency of Pinot Noir while giving it a silky texture and fine depth.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003ewild cherry\u003c\/strong\u003e, \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003eredcurrant\u003c\/strong\u003e, \u003cstrong\u003eviolet\u003c\/strong\u003e, \u003cstrong\u003erose\u003c\/strong\u003e, \u003cstrong\u003eforest floor\u003c\/strong\u003e, \u003cstrong\u003edamp earth\u003c\/strong\u003e and \u003cstrong\u003esweet spices\u003c\/strong\u003e. The fine, ethereal red fruit takes on a floral dimension before giving way to woodland accents.
