It is rooted mainly in the granite soils of the Paardeberg, complemented by plots of shallow schist and iron-rich clays west of Malmesbury. The dry-farmed vines were planted between 1960 and 2013.\u003c\/p\u003e\u003cp\u003eThe grapes are picked in 28 lots and whole-bunch pressed. Fermentations are natural. Ageing lasts 11 months, mostly in old, neutral French barrels, with a portion in concrete. The two lots of Sémillon macerate on their skins for a week before a year's ageing in a very old 2,500-litre foudre; the Colombard macerates for five days and two Chenin Blanc components go through concrete tanks, including an egg.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eripe apple\u003c\/strong\u003e, \u003cstrong\u003epear\u003c\/strong\u003e, \u003cstrong\u003equince\u003c\/strong\u003e, \u003cstrong\u003eyellow peach\u003c\/strong\u003e, \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003emandarin\u003c\/strong\u003e, \u003cstrong\u003egrapefruit\u003c\/strong\u003e, \u003cstrong\u003elinden blossom\u003c\/strong\u003e, \u003cstrong\u003ehoney\u003c\/strong\u003e, \u003cstrong\u003ebeeswax\u003c\/strong\u003e, \u003cstrong\u003eginger\u003c\/strong\u003e, \u003cstrong\u003epistachio\u003c\/strong\u003e, \u003cstrong\u003egreen olive\u003c\/strong\u003e, \u003cstrong\u003esmoke\u003c\/strong\u003e and \u003cstrong\u003esea salt\u003c\/strong\u003e. The palate, broad without heaviness, unfolds a waxy, delicately chalky texture, energised by fine, taut acidity.
