Long before the region became fashionable, William Downie began selecting grapes from several cool areas in Victoria, Australia, before settling in Gippsland, an emerging wine region with a particularly cool and wet climate. In 2006, he took a decisive step by acquiring a farm located in the foothills of the Strzelecki Range, an ideal terroir for producing high-altitude wines with an elegant and precise style.

Drawing on his many stays in Burgundy, he draws inspiration from Burgundian principles to build a viticulture focused on the expression of the terroir. He opts for high-density plantings, organic vineyard work, exclusively manual harvests, and natural, low-intervention vinification. Each cuvée is made from whole, destemmed berries, without extensive extraction, temperature control, or filtration. The aging is carefully adapted to each plot, with minimal intervention and a light touch of sulfur just before bottling, to preserve the fruit's identity and aromatic purity.

This artisanal approach gives rise to a range of exceptional Australian wines, reflecting the diversity of the micro-plots and the finesse of the Gippsland terroirs. The wines are at once floral, airy, and delicate, or sometimes more sanguine and structured, always marked by a natural elegance. A unique signature that will undoubtedly seduce lovers of great Burgundy Pinot Noirs and Chardonnays, in search of new emotions in the southern hemisphere.
