The history of the The Bouchon winery began in 1887, when Émile Bouchon , a Bordeaux winemaker, settled in Chile 's Colchagua Valley . In 1977, the family expanded its estate to the Maule Valley, a region rich in varied terroirs and old indigenous grape varieties.

Today, the 4th generation continues the legacy by focusing on the revival of forgotten grape varieties, particularly Païs, which the estate is one of the few to replant. This commitment goes hand in hand with the revival of ancient viticultural practices, such as tree-based cultivation, and a careful attention to the terroir, often neglected in the region in recent decades.

Bouchon's philosophy can be summed up in one phrase: "making something new from something old." By combining traditional grape varieties, old cement vats, and organic techniques with modern elements like amphorae, the estate produces Chilean wines of character, authentic and rooted in their terroir.
