The grapes come from old, unirrigated bush vines in Stellenbosch, under the cooling influence of the ocean. These vines, well adapted to their environment, produce small, naturally balanced and concentrated berries.\u003c\/p\u003e\u003cp\u003eThe grapes are picked by hand and fermented with their native yeasts in stainless-steel tanks, with no additions other than sulphur. Only the free-run wine is kept for this cuvée. Ageing then continues in foudres for several months, to polish the wild character of the Pinotage while keeping its fruit.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eplum\u003c\/strong\u003e, \u003cstrong\u003eblackberry\u003c\/strong\u003e, \u003cstrong\u003eblack cherry\u003c\/strong\u003e, \u003cstrong\u003eripe red fruit\u003c\/strong\u003e, \u003cstrong\u003ethyme\u003c\/strong\u003e, \u003cstrong\u003epepper\u003c\/strong\u003e, \u003cstrong\u003esmoke\u003c\/strong\u003e and \u003cstrong\u003ecocoa\u003c\/strong\u003e. Very ripe black and red fruit comes with smoky, spicy notes.
