Domaine Parent, a family house established in Pommard for nearly thirteen generations, grows Pinot Noir there on clay-limestone soils. Partly ploughed by horse, the vines are farmed using biodynamic methods, and the estate has been certified organic since 2013.

Harvested by hand, the grapes are sorted on two tables, one of them vibrating. Depending on the vintage, they are destemmed or vinified with a proportion of whole bunches, after three to five days of cold maceration. Fermentation, at controlled temperature, is conducted with gentle punching down and pumping over two to three times a day, for a maceration period of 18 to 20 days. Ageing lasts 14 to 16 months in French oak barrels, 35 to 40% of them new.

This wine reveals notes of raspberry, cherry, blackcurrant, blackberry, violet, liquorice, pepper, nutmeg and leather.
