The Syrah vines, more than 40 years old, take root in alluvial soils of sandy clays and stony limestone gravels, rich in silica. The semi-continental climate, with Mediterranean influences, brings consistent ripeness and lovely freshness.\u003c\/p\u003e\u003cp\u003eGrown organically, the grapes are harvested by hand, fully destemmed, then briefly cold-macerated before being crushed. Fermentation lasts around three weeks, with daily manual punching down. The wine is then aged solely in stainless-steel tanks, to highlight the purity of the fruit and the deep minerality of the terroir.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eblackberry\u003c\/strong\u003e, \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003echerry\u003c\/strong\u003e, \u003cstrong\u003eplum\u003c\/strong\u003e, \u003cstrong\u003elavender\u003c\/strong\u003e, \u003cstrong\u003ewild flowers\u003c\/strong\u003e, \u003cstrong\u003eblack olive\u003c\/strong\u003e and \u003cstrong\u003eblack pepper\u003c\/strong\u003e. Beneath a ruby colour with purplish glints, the nose combines black fruit, flowers and a touch of damp earth.
