The warm continental climate, with cold winters, and the mountain breezes encourage slow ripening of this demanding grape variety.\u003c\/p\u003e\u003cp\u003eThe harvest runs from 19 September to 10 October. Maceration lasts 25 days, and fermentation, with native yeasts, is completed in one to two months. The wine is then aged for 12 months in used 500-litre oak barrels, which refines its tannins while respecting the expression of the terroir.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003esun-dried tomato\u003c\/strong\u003e, \u003cstrong\u003etapenade\u003c\/strong\u003e, \u003cstrong\u003esour cherry\u003c\/strong\u003e, \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003eplum\u003c\/strong\u003e, \u003cstrong\u003eoregano\u003c\/strong\u003e, \u003cstrong\u003eclove\u003c\/strong\u003e and \u003cstrong\u003eforest floor\u003c\/strong\u003e. The very classic bouquet combines saline nuances with red fruit of great clarity.
