The climate is marked by scorching summers and heavy late-season rainfall, which produce dry whites that are light in alcohol and capable of ageing for a long time.\u003c\/p\u003e\u003cp\u003eThe grapes are picked by hand, destemmed, then gently pressed. Fermentation takes place at low temperature, without any oak. The wine is bottled around three weeks after the end of fermentation to preserve its fruit, then ages for several years in bottle at the estate before release.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003elemon myrtle\u003c\/strong\u003e, \u003cstrong\u003elemongrass\u003c\/strong\u003e, \u003cstrong\u003ewild fennel\u003c\/strong\u003e, \u003cstrong\u003elanolin\u003c\/strong\u003e, \u003cstrong\u003ebeeswax\u003c\/strong\u003e, \u003cstrong\u003ehazelnut\u003c\/strong\u003e and \u003cstrong\u003ebuttered toast\u003c\/strong\u003e. Citrus comes with waxy, toasty notes from bottle age.
