Promoting Sicily's native grape varieties, organic farming and making high-quality products are the pillars of the estate.\u003c\/em\u003e\u003cbr\u003e\u003cbr\u003eThis cuvée is made from \u003cstrong\u003eCatarratto\u003c\/strong\u003e, a native Sicilian grape variety. The vines grow on soils of different types because the estate is crossed by the \u003cstrong\u003ePlatani river\u003c\/strong\u003e, which over the years has left soil that is at once silty, sandy and full of river stones. The grapes are hand-harvested into small crates. After gentle pressing, fermentation takes place in stainless-steel tanks. The wine is aged for \u003cstrong\u003e6 months\u003c\/strong\u003e on its fine lees in the same vessel, then rests for a further 2 months in bottle. It reveals aromas of \u003cstrong\u003eorange blossom\u003c\/strong\u003e, \u003cstrong\u003ehoneysuckle\u003c\/strong\u003e, \u003cstrong\u003elemon zest\u003c\/strong\u003e, \u003cstrong\u003eapricot\u003c\/strong\u003e, \u003cstrong\u003epeach\u003c\/strong\u003e, \u003cstrong\u003emelon\u003c\/strong\u003e, \u003cstrong\u003efresh almond\u003c\/strong\u003e and \u003cstrong\u003earomatic herbs\u003c\/strong\u003e. The palate is round and aromatic, superbly balanced by an acidity that brings freshness and liveliness.
