gavalas-winery-posta-grece
Gavalas Winery - Posta - 2024

Hailing from the volcanic island of Santorini, in the heart of the Cyclades, this white wine is crafted by the Gavalas Estate in the traditional village of Megalochori. The vines, often ancient and trained in the kouloura method, are planted on poor soils of volcanic ash, pumice, and basalt, swept by the Aegean Sea winds. This extreme, dry, and phylloxera-free terroir imparts natural concentration and a strong mineral character to the grapes, emblematic of Santorini's great white wines.

The grapes for Posta are hand-harvested, carefully sorted, then gently pressed before cold settling. The must ferments at low temperatures in stainless steel tanks to preserve aromatic purity and freshness. Aging continues on fine lees in stainless steel tanks for several months, with regular bâtonnage to add volume and complexity, before bottling at the estate.

This wine reveals notes of ripe citrus, stone fruit, and white-fleshed fruit, complemented by delicate floral touches, a marked mineral dimension, and subtle saline nuances.
