The grapes come from plots between 100 and 300 metres above sea level, on alluvial soils. The areas close to the Pacific Ocean, cooled by sea breezes and morning mists, give the Sauvignon Blanc slow ripening that preserves its acidity and aromatic brightness.\u003c\/p\u003e\u003cp\u003eAfter the harvest, the grapes are vinified in stainless-steel tanks to preserve the purity and freshness of the variety. The wine is then aged for three months on its lees in stainless-steel tanks.
