The Nebbiolo vines are Guyot-trained on clay-rich limestone soils, which give the grape structure and freshness. The continental climate, with cold winters, hot summers and often misty autumns, encourages slow ripening and fine aromatic expression.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand during the first ten days of October. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks, with daily pump-overs that gently extract colour and tannins, followed by malolactic fermentation. The fresh, crunchy red fruit blends with floral nuances and a spicy touch characteristic of the variety.
