The site benefits from refreshing Pacific breezes and therefore lends itself well to \u003cstrong\u003ePinot Noir\u003c\/strong\u003e . The fruits are destemmed before undergoing a period of cold maceration. Fermentation takes place in stainless steel tanks and 30% of the blend then spent 8 months in French oak barrels. This wine reveals aromas of \u003cstrong\u003ekirche cherry\u003c\/strong\u003e , \u003cstrong\u003edried\u003c\/strong\u003e \u003cstrong\u003ecranberry\u003c\/strong\u003e , \u003cstrong\u003ewild strawberries\u003c\/strong\u003e , \u003cstrong\u003eblackberries\u003c\/strong\u003e , \u003cstrong\u003ecocoa\u003c\/strong\u003e , \u003cstrong\u003enutmeg\u003c\/strong\u003e and \u003cstrong\u003earomatic herbs\u003c\/strong\u003e . In the mouth, it is round and delicious and a nice acidity balances the whole.
