The vines cover the slopes of the Zemplén Mountains, on volcanic soils, at the confluence of the Bodrog and the Tisza. Autumn morning mists followed by sunny afternoons encourage botrytis. The Château de Sárospatak brand, which takes its name from the historic town in the north of the appellation, makes this cuvée only in the finest vintages.\u003c\/p\u003e\u003cp\u003eThe harvest stretches over several weeks: the aszú berries, shrivelled and concentrated by noble rot, are picked berry by berry in successive passes. They are then macerated in fermenting must or a base wine, following the traditional Tokaj method, before being pressed. The six puttonyos level corresponds to the most concentrated category of classic aszú. The bright golden colour heralds an intense, delicate nose.
