The climate is Mediterranean-Atlantic, with a soil composed of schists and granites, at an altitude of 400m. The manual harvest is very late ( \u003cspan\u003eharvested in December)\u003c\/span\u003e when the grapes are all affected by noble rot (botrytis cinerea). After sorting, the grapes are gently pressed and fermented at low temperature. This sweet wine will then age \u003cspan\u003ein French oak barrels for 12 months. It reveals complex aromas of \u003cstrong\u003edried fruits\u003c\/strong\u003e , \u003cstrong\u003eroasted apricot\u003c\/strong\u003e , \u003cstrong\u003ehoney\u003c\/strong\u003e , \u003cstrong\u003ewild flowers\u003c\/strong\u003e , \u003cstrong\u003ecandied citrus fruits\u003c\/strong\u003e , \u003cstrong\u003eripe peach\u003c\/strong\u003e and \u003cstrong\u003eplum marmalade\u003c\/strong\u003e .
