Each plot is vinified separately to preserve the unique characteristics of the terroir before being assembled. The harvest is manual, partial destemming and fermentation takes place in tuns using indigenous yeasts. The wine is aged for \u003cstrong\u003e14 months\u003c\/strong\u003e in tuns and will then be bottled without fining or filtration.
