In 2021, a dry season with steady temperatures produced very low yields, with particularly small berries and bunches, a guarantee of grapes of great aromatic intensity.\u003c\/p\u003e\u003cp\u003eThe harvest ran from 19 August to 17 September, in the cool early hours of the morning, in order to preserve freshness, acidity and delicacy of aroma. The wine is fully barrel-fermented, then aged for 10 months in large 500- and 600-litre barrels, made up of 47% new wood and 53% previously used wood.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eflint\u003c\/strong\u003e, \u003cstrong\u003espring flowers\u003c\/strong\u003e, \u003cstrong\u003ecitrus blossom\u003c\/strong\u003e, \u003cstrong\u003ehoneycomb\u003c\/strong\u003e, \u003cstrong\u003enutmeg\u003c\/strong\u003e, \u003cstrong\u003elemon\u003c\/strong\u003e, \u003cstrong\u003eJonagold apple\u003c\/strong\u003e and \u003cstrong\u003ewet stone\u003c\/strong\u003e. Mineral at first then floral, the bouquet opens onto citrus and orchard fruit.
