The grapes were harvested manually and come from vines planted on \u003cstrong\u003egranite soils\u003c\/strong\u003e . Vinification takes place at low temperature to preserve as much of the aromatic expression of the grape variety as possible and is then aged for 5 months in stainless steel vats.
