In late 2007, Hill-Smith Family Vineyards acquired the brand and the vineyard and wines are made at Jansz (an estate known for its traditional method sparkling wines). In 2010, Peter Caldwell, a Pinot Noir specialist, was appointed to manage the vineyard, viticulture and winemaking, bringing with him his passion for Australian wine and his love of Pinot Noir.\u003c\/em\u003e\u003cbr\u003e\u003cbr\u003e\u003cbr\u003e This cuvée is a blend of \u003cstrong\u003ePinot Noir\u003c\/strong\u003e plots located in Pipers River and Coal River Valley, two sub-regions with different climates that bring balance to the wines. The harvest is manual and each bunch is carefully inspected in order to keep only those without any defects. Fermentation was carried out in stainless steel vats with 5% whole bunches. The wine is then transferred to oak barrels for 11 months (20% of which are new). This wine reveals complex aromas of \u003cstrong\u003ered cherry\u003c\/strong\u003e , \u003cstrong\u003eredcurrant\u003c\/strong\u003e , \u003cstrong\u003erhubarb\u003c\/strong\u003e , \u003cstrong\u003ecrushed strawberry\u003c\/strong\u003e , \u003cstrong\u003eblack tea\u003c\/strong\u003e , \u003cstrong\u003ebergamot\u003c\/strong\u003e , \u003cstrong\u003eAsian spices\u003c\/strong\u003e , \u003cstrong\u003ewhite pepper\u003c\/strong\u003e , \u003cstrong\u003eviolet\u003c\/strong\u003e as well as \u003cstrong\u003eforest\u003c\/strong\u003e and \u003cstrong\u003esmoky\u003c\/strong\u003e notes. The palate is suave, silky, fresh and held by the natural acidity. The finish is long and on spices.
