It was Nicolás Catena who propelled Argentine wine into the modern era. A widely travelled academic economist, he learnt a great deal in the 1970s from the great Bordeaux wines and the up-and-coming Napa wines. In the early 1980s, Catena concluded that the key was to plant the right varieties in the right place, particularly in cooler, higher sites.

The Catena Alta Chardonnay cuvée is a blend from the Catena family's historic plots. The name of the cuvée refers to the high-altitude vineyards (over 1,500 metres) where the grapes for this Chardonnay are grown. Harvested as whole bunches, the grapes are pressed, then 100% fermented in 500-litre French oak barrels with natural yeasts at low temperature. The wine is then aged for 14 months in French oak, of which 30% does not undergo malolactic fermentation. Only first-, second- and third-fill barrels are used. This wine reveals notes of green apple, ripe pear, white peach, honeysuckle, chamomile, melon, lemon, fresh butter, chalk, biscuit and smoked wood.
