This sloping terroir, bathed in light reflected from the lake, gives the Chasselas a flinty character. The Blaise Duboux estate farms its plots here under certified organic agriculture.\u003c\/p\u003e\u003cp\u003eThe Chasselas grapes, from hand-worked vines, are harvested at full ripeness and then vinified traditionally in tank. Fermentation takes place without any oak, to preserve the floral finesse of the grape variety and the mineral imprint of the soil. The wine is then bottled to be available in spring.
