The vines, planted between 150 and 300 metres above sea level on medium-textured, stony soils of river origin, are trained on Trentino pergolas and Guyot. The harvest takes place in the first half of September.\u003c\/p\u003e\u003cp\u003eSanta Margherita was the first house to vinify Pinot Grigio as a white wine, as its pinkish skin would otherwise colour the must. After gentle pressing, the must ferments for 10 to 15 days at 18 °C, without skin contact. The straw-yellow colour heralds a clean, intense nose.
