The grapes are selected from one of the estate's best plots, with white clay and marl soils conducive to minerality. The Mediterranean climate, tempered by altitude and the proximity of the Alps, gives the Malvazija Istarska harmonious ripeness.\u003c\/p\u003e\u003cp\u003eThe vines are farmed under certified organic methods. Hand-harvested in September, the grapes are destemmed and placed, unpressed, in Georgian clay amphorae buried more than two metres underground. There they ferment and macerate for around six months on their skins, before being pressed in spring. The wine is then aged for a year in 4,000-litre oak foudres, followed by at least a year in bottle.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003equince compote\u003c\/strong\u003e, \u003cstrong\u003edried fern\u003c\/strong\u003e, \u003cstrong\u003estar anise\u003c\/strong\u003e, \u003cstrong\u003evanilla\u003c\/strong\u003e, \u003cstrong\u003earomatic herbs\u003c\/strong\u003e, \u003cstrong\u003ebutter\u003c\/strong\u003e, \u003cstrong\u003eripe peach\u003c\/strong\u003e and \u003cstrong\u003ebitter almond\u003c\/strong\u003e. The straw colour with golden glints precedes a dry, warm and supple palate of fine freshness.
