Here is a\u003c\/span\u003e\u003c\/span\u003e \u003cstrong\u003eChenin Blanc\u003c\/strong\u003e grown in Paardeberg, in the \u003cstrong\u003eSwartland\u003c\/strong\u003e region, where these old vines take root in granite soils beneath a sandy topsoil.\u003cspan data-mce-fragment=\"1\"\u003e The wine is made with a\u003c\/span\u003e short maceration and fermented with 100% whole bunches.\u003cspan\u003e \u003c\/span\u003e​The philosophy is to use as few chemical inputs as possible and a minimum of added sulphur, with grapes picked early for extra freshness.\u003cspan\u003e \u003c\/span\u003eThe resulting wine is naturally high in acidity and lower in alcohol, then aged in small used oak barrels. This wine reveals intense notes of \u003cstrong\u003equince\u003c\/strong\u003e, \u003cstrong\u003emandarin peel\u003c\/strong\u003e, \u003cstrong\u003ekumquat\u003c\/strong\u003e, \u003cstrong\u003eripe apple\u003c\/strong\u003e, \u003cstrong\u003eorange blossom\u003c\/strong\u003e, \u003cstrong\u003ebeeswax\u003c\/strong\u003e, \u003cstrong\u003emineral scents\u003c\/strong\u003e and \u003cstrong\u003esweet spices\u003c\/strong\u003e.
