Domaine Simon Gaudet’s 30-are plot, planted some sixty years ago, thrives on an exceptional soil blending chalky clay and rich marls. This noble terroir yields wines of balance and depth, built for ageing.\u003c\/p\u003e\u003cp\u003eTo showcase this terroir, winemaking is slow and traditional. After a cold pre-fermentation of about three days, gentle punching down and daily pumping over accompany the alcoholic fermentation. Production remains confidential, limited to four or five barrels a year. The vibrant garnet-red colour precedes a nose of elegant complexity.
