Domaine Parent, a family house established in Pommard for nearly thirteen generations, grows Pinot Noir there on clay-limestone soils. Partly ploughed by horse, the vines are farmed using biodynamic methods, and the estate has been certified organic since 2013.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand and sorted on two tables, one of them vibrating. Depending on the vintage, they are destemmed or vinified with a proportion of whole bunches, after three to five days of cold maceration. Fermentation, at controlled temperature, is accompanied by gentle punching down and pumping over, for a maceration period of 18 to 20 days. Ageing lasts 16 to 18 months in French oak barrels, 40 to 50% of them new.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003eviolet\u003c\/strong\u003e, \u003cstrong\u003echerry\u003c\/strong\u003e, \u003cstrong\u003eraspberry\u003c\/strong\u003e, \u003cstrong\u003eblackcurrant\u003c\/strong\u003e, \u003cstrong\u003epeony\u003c\/strong\u003e, \u003cstrong\u003eliquorice\u003c\/strong\u003e, \u003cstrong\u003esweet spices\u003c\/strong\u003e, \u003cstrong\u003eforest floor\u003c\/strong\u003e and \u003cstrong\u003evanilla\u003c\/strong\u003e. Finesse, density and an innate sense of balance characterise this great wine with its intense colour.
