The Frenchman's object of desire: the Gualtallary Valley, a picturesque, isolated and arid terrain located in the \u003cstrong\u003eUco Valley\u003c\/strong\u003e within Mendoza, Argentina. Here, where condors fly and not a vineyard in sight, Jean discovered his dream terroir, an ideal place to cultivate wines from organic farming.\u003c\/em\u003e\u003cbr\u003e\u003cbr\u003e \u003cbr\u003eThe grapes are grown at \u003cstrong\u003e1200 meters above sea level\u003c\/strong\u003e , strictly following the precepts of \u003cstrong\u003eorganic farming\u003c\/strong\u003e , in various vineyards in Tupungato, Mendoza wine sub-region. The harvests are done by hand with low yields. This cuvée is vinified according to the \u003cstrong\u003eBurgundian style\u003c\/strong\u003e , with partial introduction of whole clusters into the fermentation. The wine is then aged for approximately 10 months in French oak barrels. The palate is creamy thanks to the melted tannins and balanced thanks to the very present acidity.
