The Sémillon was planted here in 1962 on clay-loam soils, at around twenty metres above sea level. These old vines, farmed organically and without irrigation, yield grapes harvested at moderate ripeness, ensuring a freshness rare for the variety in this sunny climate.\u003c\/p\u003e\u003cp\u003eThe grapes are harvested by hand and then pressed directly, without maceration. The musts ferment spontaneously with native yeasts, partly in stainless-steel tanks and partly in neutral oak barrels. The wine is then aged for a few months on the lees in the same vessels, after full malolactic fermentation, and bottled without fining or filtration. This low-intervention approach preserves the saline texture and precision of the fruit.\u003c\/p\u003e\u003cp\u003eThis wine reveals notes of \u003cstrong\u003elime\u003c\/strong\u003e, \u003cstrong\u003eyellow grapefruit\u003c\/strong\u003e, \u003cstrong\u003epear\u003c\/strong\u003e, \u003cstrong\u003ewhite peach\u003c\/strong\u003e, \u003cstrong\u003efennel\u003c\/strong\u003e, \u003cstrong\u003ejuniper berry\u003c\/strong\u003e, \u003cstrong\u003ealmond\u003c\/strong\u003e and \u003cstrong\u003eginger\u003c\/strong\u003e. The taut, slightly creamy palate combines lively acidity with a surprisingly dense texture for its modest alcohol.
