The clay-limestone soils, crossed by faults of active limestone, give the Chardonnay a precise, mineral expression.\u003c\/p\u003e\u003cp\u003eThe grapes are vinified in temperature-controlled tanks, with skin-contact maceration that releases the aromas from the skins before pressing. Fermentation is followed by measured bâtonnage of the fine lees, which nourishes the texture.
