This coastal and hilly region benefits from the cooling influence of the Southern Ocean, which moderates temperatures and extends the ripening period. The soils are predominantly clay-loam with volcanic influences, providing good drainage and an ideal structure for Pinot Noir. The Coolart Road vineyard, carefully planted and managed at a relatively high density, allows for a beautiful expression of terroir with controlled yields.

The Pinot Noir grapes from the Coolart Road vineyard are hand-harvested, sorted, and destemmed before undergoing cold pre-fermentation maceration. Fermentation takes place in open vats with gentle pump-overs and punch-downs to extract color and fine tannins. After pressing, the wine is transferred to French oak barrels, a proportion of which are new, for extended aging on fine lees, with limited racking to preserve the purity of the fruit and the expression of the Mornington Peninsula's coastal terroir.

This wine reveals notes of juicy red fruits , black cherry , and raspberry , enhanced by floral touches of violet and dried rose, as well as spicy nuances of sweet pepper and clove.
