domaine-parent-pommard-croix-blanche-france
Domaine Parent - Pommard Croix Blanche - 2022

This Pommard comes from the lieu-dit La Croix Blanche, in the village of Pommard, in the Côte de Beaune, between Beaune and Volnay. Domaine Parent, established in Pommard for nearly thirteen generations, grows Pinot Noir there on clay-limestone soils, on slopes facing east and south. Certified organic since 2013, the estate farms its vines using biodynamic methods, attentive to the natural cycle of the seasons.

The grapes are harvested by hand and sorted on two tables, one of them vibrating. Depending on the vintage, the harvest is destemmed or partly kept as whole bunches, before a cold maceration of three to five days. Fermentation, at controlled temperature, is punctuated by gentle punching down and pumping over, for a maceration period of 16 to 18 days. Ageing lasts 14 to 16 months in French oak barrels, 35% of them new.

This wine reveals notes of wild cherry, blackcurrant, blackberry, raspberry, violet, peony, black pepper, leather and vanilla.
